Previously we told you how much the food at Hedonism II has improved with the appointment of Anthony Miller as head chef. Now we have even more evidence of Hedo’s new emphasis on food. With the help of Dream Pleasure Tours, Hedo just held the Hedonism Jerk Sauce Competition with our very own Zee as one of the judges! From what we hear, the competition was as tough as when the Iron Chefs compete in Kitchen Stadium. Where’s Alton Brown when you need him?
But let’s back up just a bit. About a month ago, Kevin Levee, general manager of Hedonism II; Anthony Miller, the new head chef; and Zee, were having a discussion about jerk sauce. Such a discussion would not be unusual as Zee is always thinking about food (she’s the only person we know who was ever caught trying to smuggle bananas into Mexico). So Chef Anthony suggested a jerk sauce competition, Dream Pleasure Tours agreed to donate prize money for the winners, and the event was scheduled for June 29.
For anyone who’s been to Jamaica, jerk cooking requires no introduction. For those of you who have not, jerk is a style of cooking native to Jamaica in which meat is dry-rubbed or wet marinated with a very hot spice mixture called Jamaican jerk spice. Jerk seasoning is traditionally applied to pork and chicken. Modern recipes also apply jerk spice mixes to fish, shrimp, beef and lamb. Jerk seasoning principally relies upon two items: allspice (called "pimento" in Jamaica) and Scotch bonnet peppers (similar in heat to the habanero pepper). Other ingredients include cloves, cinnamon, scallions, nutmeg, thyme, garlic, and salt. Traditional jerk is cooked in a 45 gallon drum barbeque which ads smoke flavor to the food.
The chefs from Hedo were divided into teams. Each team had forty minutes to prepare their version of jerk. They were given ten minutes to pick the ingredients and thirty minutes to prepare the sauce and create a presentation. The teams were judged on kitchen cleanliness, taste, presentation and creativity.
All the chefs did a fantastic job and there are four new sauce creations that will definitely make it to the Hedo Grill menu. The winning sauce will become the signature Hedo Jerk Sauce. Nine chefs competed, there were three runners-up, and the winning sauce was created by Chef Mark. Chef Mark is a young chef who is very creative and who loves to dance and cook at the same time. His winning sauce is called Firecracker, a suitable name for a Hedo sauce. In the photo to the right you can see general manager Kevin Levee awarding the Jerk Sauce Trophy to Chef Mark.
Zee says, “It was a very great event and to those who are hesitant about the food at Hedo, you can calm yourself down. The food is getting better each day. I have been here twice since Chef Anthony came to work and I see the improvements already. I cannot believe that I am actually loving being at Hedo again; far more than I ever did in all my dozens and dozens of visits.”
Now all we want to know is if Zee’s suitcase is big enough to bring back a couple of jerk chickens!
